I found this recipe in the Oxygen Magazine this summer. I made if for our DC trip and it is amazing! I wouldn't eat this all the time and make sure to use in moderation! It provides you with all the things you need for a complete snack. I used a 1/4 cup with 1/2 cup of greek yogurt for a snack, it satisfies my sweet and crunchy fix!
Ingredients:
- 3/4 cup sunflower seeds
- 1 1/2 cups oatmeal
- 1/4 cup ground flaxseed
- 1/2 cup dried cranberries
- 1/2 cup slivered almonds
- 1/2 cup shredded unsweetened coconut
- 3 tbsp natural peanut butter
- 1/2 tsp sea salt
- 1/3 cup raw honey
- 1/2 tsp pure vanilla extract
Preheat oven to 300 degrees. In a large bowl, combine all ingredients and mix until evenly blended. Press mixture into a baking pan and bake for 40 minutes. Enjoy 1/2 cup as a superfood snack.
