Cottage Cheese and Salsa Cups

Relying on coffee for a quick zip? Try this energizing snack combination instead. The slow-digesting casein protein (from cottage cheese) and complex carbs (from the crackers) will hold you over until your next meal proving a sustained release of energy.

Cottage Cheese and Salsa cups


2 hard boiled eggs, chilled for at least an hour.

4 tsp salsa

2 tbsp low-fat cottage cheese

Rosemary and ground black pepper to garnish.

1. Peel shell off eggs and cut in half. Scoop out the yolks and discard.

2. Arrange egg halves in a bowl and fill each with ½ tbsp cottage cheese and 1 tsp salsa.

3. Sprinkle with herbs and/or pepper to taste. Optional, serve with whole grain crispbread such as Ryvita.
