This might be the second easiest recipe that I have found that is clean! I am a huge fan of Mexican food and as we all know it is not low in calories and fat! So I am constantly searching out recipes that will satisfy that fix! Here is one I stumbled upon in the Taste of Home Magazine!
I made enough for the rest of the week and pre portioned it out in tupperware containers and now I have quick easy meals for the rest of the week! Planning is key to your success!
Ingredients:
- 1 lbs ground turkey
- 1 tbsp olive oil
- 2 cans rinsed and drained kidney beans
- 2 cans (14 oz) chicken broth
- 2 cups frozen corn
- 1 cup clean salsa
- 1 can (4oz) chopped green chilies
- 1 tbsp chili powder
Directions: in a dutch oven, brown 1 lb of ground turkey in 1 tbsp olive oil and drain. Add 2 cans of kidney beans that are drained and rinsed. Next add chicken broth, frozen corn, salsa, chopped green chilies and 1 tbsp chili powder. Bring to a boil; cover and simmer for 10 minutes. Serve soup topped with fresh cilantro!
Makes 6 servings!
