As I flipped through the Les Mills Pump nutrition guide looking for some new recipes to try I came across this tasty breakfast option. If you don't know anything about quinoa I will give you the scoop. It is a type of grain, but it is very high in protein. It is cooked similar to rice, but has more of a chewier texture. It has a slight nutty flavor and totally satisfies my need for something crunchy like cereal. It's a great way to make sure that you are getting in enough protein during the day and giving yourself complete meals so that you stay full longer and are left satisfied instead of hungry. Give it a try!!!
Ingredients:
- 2/3 c cooked quinoa
- 1/2 cup skim, almond, rice or soy milk
- 1/2 c blueberries
- 2 tbsp ground flax seeds
- Ground cinnamon to taste
In a microwave bowl, combine cooked quinoa with milk, microwave for 60 seconds or until heated. Top with blueberries, flax seeds, and cinnamon. Add honey or agave if you need to sweeten!!
