Asian Cabbage Salad is a new favorite in our house! This is a great lunch option that you can make a head of time. You can pack it in your cooler with the dressing separate. Then mix the dressing over salad an hour before you eat! Full of flavor and full of nutrition! Tip: I think there is too much dressing, so I typically only use 1/2 of the dressing and save the rest for the next day! I usually pair it with a side of miso soup or today it was the Roasted Red Pepper and Sweet Potato Bisque.
Ingredients:
3 tbsp rice vinegar
2tbsp fresh lime juice
2 tbsp. toasted sesame oil
1 1/2 tsp. fresh ginger juice (grate a piece of fresh ginger and squeeze juice into a bowl)
2 tbsp Bragg Liquid Aminos
1/2 head Napa or Savoy Cabbage (or regular green cabbage)
1 carrot, shredded
1/4 small red onion, thinly sliced
1 1/2 green onion, thinly sliced
2 tbsp roughly chopped cilantro
Himalayan Salt to taste
