I LOVE LOVE LOVE COCONUT!!! I can honestly say that this is pretty darn good! My husband is doing the Ultimate Reset and the breakfast this week was Coconut Quinoa. I let him try it first of course and when I got the thumbs up that it's really tasty I decided to give it a try myself!
Let me tell you it is really good! I think I would add some unsweetened flaked coconut too!
So here is the recipe so you can try it too!
3/4 cup cooked quinoa, warmed
2 tbsp. canned coconut milk, warmed
1 tsp. pure maple syrup
1/4 cup fresh pineapple chunks
1 tbsp chopped raw walnuts
Combine warm quinoa, coconut milk, and maple syrup. Mix well. Place in serving bowl and top with pineapple and walnuts!
Matt made the quinoa ahead of time stored it in the fridge and just portioned out his 3/4 cup per serving. No we can eat it all week long!
